Whether you’re looking for a summer treat or just an easy dessert to bring to a party, this s’more cookie bar recipe is a crowd favorite!
Why I Love These S'more Bars
- No fancy layers: While some s’more bar recipes require you to make separate time-consuming layers, these gooey cookie bars can be made in 1 bowl in under 10 minutes! You don’t even have to chill the dough!
- One bowl & no mixer needed: Yes, that’s right. You can whip up these chewy chocolate chip s’more bars in one bowl without a mixer!
- Gooey texture with a firm crust: Because we’re layering chocolate chip cookie dough on top of a layer of graham crackers, these s’more bars are basically like gooey, marshmallow chocolate chip cookies...but in bar form.
- Kid Favorite: Whether you make these for after school snacks, potluck desserts, or just as summer treats for kids, these are sure to be a crowd favorite! It’s like a giant s’more cookie cake but in a 9x13 pan.
Are you a chocoholic? I have a new chocolate version of these using my cosmic brownie cookie dough base...Chocolate S’more Cookie Bars!
Ingredients for S’more Bars
- Cookie Dough: Unsalted butter, brown sugar, granulated sugar, egg, vanilla extract, baking powder, all-purpose flour, salt.
- Graham Crackers
- Mini Marshmallows
- Semi-Sweet Chocolate Chips (milk chocolate work too)
Tip: you could also make these s’more bars with premade dough from Pillsbury or Betty Crocker mix but you will need to adjust the pan size and baking time.
Step 1: Prepare Graham Cracker Crust
Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick cooking spray.
Place 17 graham cracker squares in the pan so they cover the bottom. Set aside.
Step 2: Crush Graham Crackers
Add 8 graham cracker squares (i.e. 4 double rectangle) to a large ziploc bag. Use a rolling pin or metal pan to crush the crackers until you get graham cracker crumbs. This will equal ½ cup. Set aside.
Step 3: Make Cookie Dough Layer
In a small microwave-safe bowl, melt the butter for 20-30 seconds until JUST melted (you don’t want it piping hot).
Transfer butter to a large bowl and add in white sugar and brown sugar. Use a spatula (don’t use a mixer!) to stir by hand until combined. Mix in egg. Next, mix in baking soda, baking powder, and salt.
Add flour and graham cracker crumbs, then mix until all the flour disappears into the dough. Lastly, mix in mini marshmallows and ½ cup chocolate chips.
Step 3: Drop Dough Into Pan
Using a spoon or your clean hands, drop the dough into small chunks in the pan. This will help disperse everything so that you can easily smooth it out. (I highly recommend this method rather than trying to spread out a large chunk.)
Step 4: Press & Smooth Dough
Once all dough as been added, use a spatula or your hands to press down the dough into a smooth layer (being sure to get all the corners). Be careful not to shift around the graham crackers too much.
Once spread evenly, sprinkle ½ cup of chocolate chips on top of the dough and lightly press into dough.
Step 6: Bake, Cool, Cut
Bake at 350 degrees for 12-14 minutes or until top is a light golden brown and marshmallows are lightly toasted. Do not overbake or your bars will not be soft and chewy.
If desired, press on Hershey bar rectangles for added aesthetic.
Allow to cool before cutting into 24 pieces.

I have not baked before and making this recipe was really easy and I had fun with it. I didn’t stray too far from the recipe, but instead of just 1 cup of marshmallows, I added a cup and a half. I also sprinkled some salt on top after adding the chocolate bars, to make the chocolate pop.
Melissa
Yay, so glad you enjoyed this recipe and had fun making it! Thank you so much for leaving a review, Berenice! I really appreciate it!
Manha
Can I make the dough and refrigerate it a night before I actually bake it?
Melissa
You can, but I don't typically recommend it with doughs like this that use melted butter because the dough can dry out a bit.
Theresa
I'll be back once I've made these but wanted to comment that I LOVE that ingredient quantities are included in the steps so I won't have to scroll back and forth as I follow the recipe!
CHERIE CASTLE
I followed recipe to a 'T' for a 9x13 pan, including adding the (I used mini) Hesheys bars. Recipe comes together quickly if you have all the ingredients on-hand. They are a huge hit!. One person wanted to know if he could buy them packaged so he could eat one everyday, and another said 'holy heck that is good' and wanted the recipe. With the positive comments from the group, this recipe is a keeper!. Only note is that I do think that they taste best the first day.
Melissa
So glad to hear everyone enjoyed the recipe! Thank you so much for leaving a review, Cherie! I really appreciate it!
Ann
Can this be made with premade cookie dough?
Melissa
Yes, you totally could!
Kim
I made these for a quick treat for a pot luck lunch at work and it was the absolute worst decision of my life. My coworkers finished these before lunch was served and have demanded these bars several times a week! I’ve taken to buying graham crackers, marshmallows, and chocolate chips in bulk! Seriously, these are divine. They always hit the spot, they aren’t heavy (even if you eat several like my coworkers are known to do), and they’re easy to throw together. If you’re questioning whether or not to make them, just do it. You’ll be a rockstar!
Melissa
Hahaha, sounds like a blessing and a curse! I'm so happy to hear everyone loves this recipe so much! Thank you so much for taking the time to leave a review, Kim! I really appreciate it! :)

Can I use oil instead of butter
Melissa
Not for these, you'll definitely want to use real butter (not oil or margarine).
Sharquita Pinkton
Okay so I haven’t made the recipe yet, but I’ll definitely be making these tomorrow and will come back with a different review and possibly pictures. I had to leave a review before the recipe because it’s just amazing how simple it is to find these recipes without having to scavenge them.

AWESOME!!
I only had a glass pan so took a little longer to bake, and then broiled to get the golden brown color but this is DELIOUS and SUPER easy to make. Adding to my Christmas cookie box :).
Melissa
Thank you so much for taking the time to leave a review, Justine!
Shelby

Emily
Can the filling be doubled for a 9 x 13 pan?
Melissa
I probably wouldn’t double it, I think the thickness wouldn’t bake up the center enough before the top gets too brown!
Ky

Vera
Hi! I made these and baked them for 14 min 350 and they were still almost raw. Put them back in for a few mins. Not sure if I did something wrong???? Followed the recipe.
Melissa
Hey Vera! What type of pan did you use; light metal, glass, disposable? Also, do you have an internal oven thermometer? They are around $5 on amazon and all my ovens over the years have been 15-20 degrees off and are 100 degrees off when they *say* they're preheated, so they take longer to preheat to the correct temperature. It sounds like your oven might run cold.
Andrea Pascual
DELICIOUS! I have been craving s’mores for the past week, and I wanted an elevated version of them. I searched on TikTok, and this was the only recipe that really stood out to me. This is the perfect recipe and is super easy to make. The s’mores cookie bars are not overly sweet, but still have that nostalgic warm feeling when you take a bite. Thank you so so much for this recipe, and I will be making these for parties and the holidays!
Melissa
