- No heating needed: While some recipes require you to dissolve the sugar and water on the stove to make a simple syrup, I've found that hot tap water does the job and speeds up the process.

- Fresh lemons: Using fresh lemon juice is essential for making homemade popsicles, as bottled lemon juice has a distinctly different flavor. This is the perfect easy recipe if you have extra lemons in the fridge that you need to use up.
- Granulated Sugar: While the given recipe amount provides the ideal balance of sweet and tart, you can opt for your preferred sweetener (such as honey, maple syrup, or coconut sugar). Just adjust the quantity to achieve your desired level of sweetness.
- Water: To dissolve the sugar, you want your water to be hot (not lukewarm). I use hot tap water; however, if your faucet's water isn't hot enough, you can heat it in the microwave for about 30 seconds.
- Popsicle Mold: I like this silicone popsicle mold because it only has two main pieces. I've tried some other plastic molds that have individual lids for each one and they are hard to store.
How to Make Homemade Lemon Popsicles
These homemade ice pops are easy to make and are the perfect way to cool down on a hot day! Here's how to make them:
Step 1: Make Lemonade
- In a large pitcher, mix the hot water (1 cup) and granulated sugar (½ cup) together until dissolved.
- Stir in cold water (3 cups) and fresh lemon juice (¾ cup) until sugar is dissolved.
Tip: If you don't have a pitcher, simply use a large bowl to mix.
Step 2: Pour into Popsicle Molds
Pour into silicone molds, attach popsicle sticks, then freeze. If you mixed it in a large bowl that doesn't have a spout, I suggest using a funnel or cup to pour it into the molds.
Step 3: Remove from Mold
Once frozen, run the ice pop mold under hot water to help loosen the popsicles, then slide out.
Storage: If you want to make several batches but only have one mold, remove the frozen popsicles and place them in a freezer bag or airtight container. I suggest layering them between parchment paper so that they don't stick together. This helps so you can just grab them instead of having to remove them from the mold each time.
Tips & Variations
- Add fresh mint: Place a few mint leaves in the lemonade and allow them to "marinate" for about an hour before removing them and freezing. For a more robust flavor, you can blend them into the lemonade before freezing.
- Use lime juice: You can totally swap out the lemon juice for lime juice, or even add fresh raspberries or strawberries to make my strawberry lemonade popsicle recipe! Using fresh fruit is a great way to use up berries that may be getting old.
- Make them creamy! For a creamier popsicle, stir in a splash of coconut milk or heavy cream. This will give you delightfully creamy popsicles!

I got my popsicle mold on Amazon and like it because it removes cleanly & doesn't have a bunch of pieces. It also helps prevent freezer burn so that your popsicles taste fresh even if they've been in the freezer for a week.
As a kid, we would make popsicles in Dixie cups. I haven't tried this method recently but you can definitely give it a try! I would use the ones that have the slight wax coating on the inside vs. being pure paper. Otherwise, they may get soggy and be hard to remove. If using this method, wait a few hours to insert the popsicle sticks until the lemonade is slushy and can hold the stick.
