Caramel Apple Biscoff Salad
Ingredients
- 2 apples (granny smith or honeycrisp)
- 6-8 Werther's caramel apple soft caramels
- 8 ounces cream cheese
- ¾ cup Biscoff cookie butter divided
- 8 ounces Cool Whip, thawed
- 16 Biscoff cookies

Instructions
- Peel, core, and chop the apples (2 apples) into small ½” cubes. Tear the soft caramels (6-8 pieces) into 3-4 pieces each. Set aside.
- In a large mixing bowl, use an electric mixer to beat cream cheese (8-ounces) and part of the Biscoff cookie butter (½ cup) for 1-2 minutes until smooth and creamy.
- Gently fold in the whipped cream (8 ounces), being sure not to overmix and “deflate” the whipped cream.
- Lastly, gently mix in all of the chopped cubes and caramel pieces.
- To layer, transfer half of the salad to a clean bowl, then top with 6 crushed Biscoff cookies. Cover with remaining mixture.
- Warm up the remaining Biscoff cookie butter (¼ cup) and drizzle on top. Top with crushed Biscoff cookies and decorate the rim with halved Biscoff cookies.
- Cover and keep refrigerated until ready to serve. This is even better the next day as the cookies absorb all the flavor and get softer, which I like!
