Peel, core, and chop the 2 apples into small ½” cubes. Tear the 6-8 Werther's caramel apple soft caramels into 3-4 pieces each. Set aside.
In a large mixing bowl, use an electric mixer to beat 8 ounces cream cheese and 0.5 cup Biscoff cookie butter for 1-2 minutes until smooth and creamy.
Gently fold in the 8 ounces Cool Whip, thawed, being sure not to overmix and “deflate” the whipped cream.
Lastly, gently mix in all of the chopped cubes and caramel pieces.
To layer, transfer half of the salad to a clean bowl, then top with 6 crushed Biscoff cookies. Cover with remaining mixture.
Warm up the remaining 0.25 cup Biscoff cookie butter and drizzle on top. Top with crushed Biscoff cookies and decorate the rim with halved Biscoff cookies.
Cover and keep refrigerated until ready to serve. This is even better the next day as the cookies absorb all the flavor and get softer, which I like!
