Why I Love This DIY Pancake Mix
- Tastier & cheaper than premade! After breaking down the costs, each batch of dry mix comes out to about $0.65 🤯 That means, when mixed with the wet ingredients, it only costs about $1.50 to feed a family of 4 breakfast!
- Save time & cleanup: Having everything pre-measured prevents you from having to get out all the ingredients & dirty dishes every time you're wanting pancakes!
- No buttermilk needed! You can still achieve a fluffy, diner-style pancake without buttermilk.
- Personalize: This DIY pancake mix allows you to customize your muffins according to your taste preferences, whether it's adding blueberries, chocolate chips, extracts, or nuts!
Dry Mix Ingredient Notes
- All-purpose flour: No fancy flours needed, just use good ol' all-purpose! I have not tested this recipe with gluten-free flour yet, but if you do, report back!
- Granulated sugar: These pancakes were created to not be overly sweet, so that you could add the sweetness with the syrup and toppings. I do not suggest changing the amount of sugar, as it will affect the structure and texture.
- Baking powder: do not use baking soda!
- Salt: I use kosher salt for all my baking
- Mix-ins: You can add any dry mix-ins directly to the bag (i.e cinnamon or chocolate chips), depending on what your preference is!

- Printable tags or a sharpie marker
- On the container, attach printable tag or write:
Add 1 ¾ cup dry mix, 1 egg, 1 teaspoon vanilla extract, ¼ cup (½ stick) melted butter, 1 cup milk, and ¼ cup water. Cook on a griddle around 300-325℉ or on medium-low heat. Wait for bubbles to form, then flip! - Measure out dry ingredients into container (this makes a 6x batch). Close and shake bag or container to combine. If measuring directly into the storage container, leave 3-4" on top of extra space so that you can shake it to combine.
- 9 cups all-purpose flour
- 1.5 cups granulated sugar
- 6 tablespoons baking powder
- 2 tablespoons salt

- Top with butter, syrup, fresh fruit, and whipped cream!
Flavor Variations
- Chocolate Chip Pancakes: ¾ cup semi-sweet chocolate chips

Our family’s absolute favorite homemade pancakes! I love being able to have a batch of dry mix on hand for easy and quick mornings! #BakeAndTake
the pancakes are so soft and perfect with whipped cream and caramel! #BakeAndTake
We made these for the monthly challenge, and they were a crowd pleaser. #BakeAndTake
Can this be made with dry milk and just add water when making?
Hi Shirley - I haven't tested this method so I can't say for sure!
Can this mix be made adding dry milk or buttermilk and then use all water when making pancakes?
Made these for Christmas morning and I have to say, these are probably the best homemade pancakes I've made. It's making my recipe book. Kids devoured them and while my husband and I don't typically like pancakes, we both ate 2! Very, very good recipe! We got about 10 average size pancakes with this recipe and it fed 6 of us and the dog because I dropped one on the floor 🤦♀️.
Yay, that makes me so happy to hear! I'm so glad you and the family, including the dog ;), enjoyed this recipe so much! Thank you so much for leaving a review, Desiree!
My boys love it 🤩
Thank you so much for leaving a review, Giselle!
How long would this be self stable?
I’d say 2-3 months for best freshness, longer if vacuum sealed!
My kids favorite pancake recipe! I finally have happy campers in the morning for breakfast:)
I'm so glad your family enjoys these pancakes, A.B.! Thank you so much for taking time to leave a review. I appreciate it!
I’ve made this recipe several times now, as waffles and pancakes, and it’s always a success. I’ve tried other recipes, and premixed packages in the store, but this is the only one my kids say is delicious and fluffy every time!
I also love that it is simple ingredients that I always have in hand.
I am so glad your family loves this recipe! Thank you for taking time to leave a review!
I tried this recipe today and it did not disappoint! Only thing I did different because I was being lazy I made them into (soft) waffles in my mini Dash Waffle maker.
I couldn't stop eating them!!
Do you have a waffle recipe?
So glad you loved them! I have a waffle recipe (and a blog post with them in minis!): https://www.designeatrepeat.com/crispy-waffles/
Instead of using the regular granulated sugar can we use cane sugar?
That should work just fine!
REALLY easy to make and the BEST pancakes! i absolutely loved this recipe.
Thank you so much for leaving a review, Thao!

Thank you so much for leaving a review, Pam!
These are the best pancakes we’ve ever had! They’re so good that my husband who always needs syrup said the pancakes didn’t need any sweetness added. We ate them plain, with wild blueberries, and with mini chocolate chips mixed in. All were so good!
I'm so glad you both enjoyed the pancakes, Zerlynn! Thanks so much for taking time to leave a review!
I would have never believed from-scratch pancakes could be THIS amazing. I can hardly wait until breakfast tomorrow! Sweet, fluffy, and sooooo easy to make!
