Why I Love This DIY Pancake Mix

- No buttermilk needed! You can still achieve a fluffy, diner-style pancake without buttermilk.
- Personalize: This DIY pancake mix allows you to customize your muffins according to your taste preferences, whether it's adding blueberries, chocolate chips, extracts, or nuts!
Dry Mix Ingredient Notes
- All-purpose flour: No fancy flours needed, just use good ol' all-purpose! I have not tested this recipe with gluten-free flour yet, but if you do, report back!
- Granulated sugar: These pancakes were created to not be overly sweet, so that you could add the sweetness with the syrup and toppings. I do not suggest changing the amount of sugar, as it will affect the structure and texture.
- Baking powder: do not use baking soda!
- Salt: I use kosher salt for all my baking
- Mix-ins: You can add any dry mix-ins directly to the bag (i.e cinnamon or chocolate chips), depending on what your preference is!
How to Make DIY Pancake Mixes:
Option 1: Pre-Measured Bags
What you need:
- Quart-sized ziploc bags
- Printable tags or a sharpie marker
- On the bag, attach printable tag or write:
"Add: 1 egg, 1 teaspoon vanilla extract, ¼ cup (½ stick) melted butter, 1 cup milk, and ¼ cup water. Cook on a griddle around 300- 325ºF or on medium-low heat. Wait for bubbles to form, then flip! - Measure out dry ingredients in each bag. For easy filling, fold the top of the bag down a few inches, then add the flour first as they it hold down the bag. Close and shake bag to combine.
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder note: this is 1 tablespoon (not teaspoon!) and baking powder (not baking soda!)
- 1 teaspoon salt
- Optional: ½ teaspoon cinnamon

Option 2: Large Container
What you need:
- Gallon-Sized Ziploc Bag or 4-Quart Container
- Printable tags or a sharpie marker
- On the container, attach printable tag or write:
Add 1 ¾ cup dry mix, 1 egg, 1 teaspoon vanilla extract, ¼ cup (½ stick) melted butter, 1 cup milk, and ¼ cup water. Cook on a griddle around 300- 325ºF or on medium-low heat. Wait for bubbles to form, then flip! - Measure out dry ingredients into container (this makes a 6x batch). Close and shake bag or container to combine. If measuring directly into the storage container, leave 3-4" on top of extra space so that you can shake it to combine.
- 9 cups all-purpose flour
- 1.5 cups granulated sugar
- 6 tablespoons baking powder
- 2 tablespoons salt
- Optional: 1 tablespoon cinnamon
Step 3: Make Pancakes!
- When ready to make, mix with wet ingredients and stir until just combined (it can be a little lumpy, doesn't need to be totally smooth!).
- Cook on a griddle around 325-350℉ (my griddle runs hot so I do 325℉) or on medium-low heat in a pan on the stove. Wait for bubbles to form, then flip!
- Top with butter, syrup, fresh fruit, and whipped cream!
Flavor Variations
- Chocolate Chip Pancakes: ¾ cup semi-sweet chocolate chips
- Blueberry Pancakes: ¼ teaspoon almond extract + ¾ cup frozen wild blueberries
- Lemon Blueberry Pancakes: ½ teaspoon lemon extract + zest of 1 lemon + ¾ cup frozen wild blueberries
