Why I Love This Queso Dip
- Made in the crockpot! After browning the pork, you can literally dump everything else in the crockpot and forget about it!
- Smooth & creamy: The Velveeta and liquid from the Rotel gives this a runny dippable consistency.
- Not too spicy: The Rotel adds a kick but doesn't make this unbearable spicy, which makes it good for adults & kids!

Ingredient Notes & Substitutions
- Velveeta Queso Blanco: this comes in one giant 2lb block. You can also use White American cheese from the deli counter, you will just need to thin it out with cream or milk.
- Mild ground pork sausage: we used Jimmy Dean but you can get any seasoned pork sausage from the meat counter.
- Corn & Black Beans: any brand from the can is fine
- Cream cheese: This adds an extra creamy consistency
- Original Rotel diced tomatoes with green chiles: We used the "Original" since it adds spice but not too spice. Feel free to add different heat levels based on your preference.
How to Make Crockpot Queso Dip
This dip is super easy to whip up, making it the perfect thing to make for game-day or as an appetizer to any party!
Step 1: Brown Pork
In a skillet over medium heat, cook the pork sausage (1 pound) until browned and fully cooked through. Drain any excess grease and transfer the cooked sausage to the crockpot.
Step 2: Add remaining ingredients
- Drain the corn (15-ounces) and black beans (15-ounces), then add them to the crockpot mixture. I like to rinse the beans but it's not necessary.
- Cube the Velveeta Queso Blanco (32-ounces), then add to the crockpot with the sausage.
- Add cream cheese (4-ounces), Rotel (20-ounces, undrained), into the crockpot.
Step 3: Slow Cook for 2 Hours
Stir all ingredients to combine well. Cover the crockpot with a lid and set it to "low" for about 2 hours, stirring occasionally, until the cheeses are fully melted and the dip is smooth and creamy.
Step 4: Serve
Once everything is melted and well-combined, give the dip one final stir and serve it warm with tortilla chips.
Serving tip: I like using these shallow, plastic bowls from Target, then placing a small bowl or ramekin in the center!
Storage & Freezing
- Storage: Allow to fully cool, then cover and store in the refrigerator. Do not put hot dip the fridge until it is fully cooled.
- Freezing: Allow to fully cool, then place in an airtight container and freeze for 1-2 months. When ready to eat, thaw in fridge then reheat in the microwave or the stove.
Frequently Asked Questions:
Yes, you can use the regular Velveeta or any blocks of American cheese that melt down properly (you will just need to add milk or cream to thin it out).

Notes
- For extra spice, try using hot breakfast sausage or a spicier variety of Rotel. You can even add extra spices like chili powder or cumin.
- To keep the dip warm during parties, leave the crockpot on the "warm" setting.
