These no bake peanut butter bites only require four ingredients (no butter here!) and can be whipped up in a food processor! If you’re a fan of frozen Reeses peanut butter cups without all the guilt, these are for you.
I’m convinced that frozen Reeses peanut butter cups are the nectar of the earth. Unfrozen = meh. Frozen = lockthatfreezerup. So when the Easter bunny happened to find a 12 pack of Reeses at the store for $1, things got dangerous. A frozen Reeses a day sure does keep the peanut butter cravings away, but it sure doesn’t keep the gym away. So I decided to whip out my NutriBullet and see what kind of homemade concoction I could whip up. And let me tell ya, the results were lockthatfreezerup worthy.
Unlike a lot of peanut butter ball recipes that use loads of butter and sugar, these peanut butter bites keep it simple. No baking required, just a food processor, peanuts, a dash of honey, a spoonful of powdered sugar, and some chocolate to dip them in.
After pulverizing the peanuts in a food processor, add in the honey and powdered sugar, and you are ready to give them some shape. I used a candy mold to shape these, but you can also just divide the mixture into 8 parts and roll them into balls.
Once shaped, pop them in the freezer to harden for a few hours and then dip them in chocolate. I used Ghiradelli melting wafers for these as I find that the chocolate is thin enough for a clean dip, while hardening quickly so you’re not having to wait around for hours for it to set. Wrap them up individually or toss them in a airtight container before storing in the freezer and you’ve got yourself a on-the-go peanut butter bite to satisfy those Reeses cravings!
Mini Peanut Butter Balls
- 1/2 cup salted peanuts
- 1 teaspoon honey
- 1 teaspoon powdered sugar
- 1/2 cup chocolate melting wafers
In a food processor, blend peanuts for 20-30 seconds until pulverized.
Add in honey and powdered sugar. Continue to blend for 10-20 seconds until incorporated.
Separate mixture into 8 even sections and roll into balls (or press into candy mold). Freeze for 1-2 hours until hard.
To prepare for dipping, place a sheet of parchment paper on counter.
Melt chocolate according to instructions on package and use a fork to dip each peanut butter bite into the chocolate. I like to place each bite on top of a fork and then tap off the excess chocolate before placing the bite the parchment paper.
Allow chocolate to harden. Wrap individually or place in airtight container in freezer to store. I personally like these best when frozen, but they can also be enjoyed unfrozen for a softer treat.
This recipe creates a small batch of 8 bites, but you can easily double or triple the recipe for a larger crowd!
So do they taste the same as Reeses? They’re not exact, but they are pretty darn close! And the best part is that you know exactly what went in them, didn’t have to add in loads of butter, and can make them at home. They satisfy my peanut butter cravings just the same as Reeses, and for that, I consider it a success.
