Whip up a batch of this easy cookie sandwich frosting to spread between your favorite cookie recipe! With just 5 ingredients and 10 minutes, you can create the cutest little sandwiches that rival the mall!

Cookie Sandwich Frosting

This creamy & fluffy cookie sandwich frosting tastes like ice cream and is perfect for pairing with any cookie (like my mini m&m cookies!) or cookie cake! If viewing on TikTok, scroll to the bottom of this screen for instructions.

Ingredients

  • ½ cup unsalted butter softened to room temperature
  • 2 ½ cups powdered sugar
  • 2 teaspoons vanilla extract
  • â…› teaspoons salt
  • 2-3 tablespoons milk or heavy cream use 2-3 tablespoons, as needed

Instructions

  1. Beat the softened butter on medium-high speed for 2-minutes until smooth. Turn the mixer to low speed then add the powdered sugar 1/4 cup at a time. You may need to stop and scrape down the sides.

  2. Add vanilla and salt and turn mixer to medium speed. One tablespoon at a time, add milk. Beat on high for 2-3 minutes until creamy and the frosting is at a good consistency to pipe. If it looks too runny, add more powdered sugar. If it looks too stiff, add a tiny bit of milk until you get to the desired consistency.

  3. This will make just enough frosting to fill about 12 cookie sandwiches (2 tablespoons of frosting each) or to pipe a border & add a message to a round cookie cake.

    So so good! I could literally sit with a spoon and eat this whole bowl myself. It’s not overly sweet like some of the icing that some places use in their cookie sandwiches. I will definitely make this again!
