- ½ cup unsalted butter softened to room temperature
- 2 ½ cups powdered sugar
- 2 teaspoons vanilla extract
- ⅛ teaspoons salt
- 2-3 tablespoons milk or heavy cream use 2-3 tablespoons, as needed

Instructions
- Beat the softened unsalted butter (½ cup, i.e. 1 stick) on medium-high speed for 2 minutes until smooth. Turn the mixer to low speed then add the powdered sugar ¼ cup at a time (2 ½ cups total). You may need to stop and scrape down the sides.
- Add vanilla extract (2 teaspoons) and salt (⅛ teaspoon) and turn mixer to medium speed. One tablespoon at a time, add milk or heavy cream (2-3 tablespoons total). Beat on high for 2-3 minutes until creamy and the frosting is at a good consistency to pipe. If it looks too runny, add more powdered sugar. If it looks too stiff, add a tiny bit of milk until you get to the desired consistency.
- This will make just enough frosting to fill about 12 cookie sandwiches (2 tablespoons of frosting each) or to pipe a border & add a message to a round cookie cake.

You don't need to refrigerate it while they're baking, it's fine to leave out.

It's a really well done recipe! Easy to understand, straightforward, and simple. If tis your first time making icing/frosting, it will most certainly take longer than 10 minutes, but definitely less than 30. At first I thought that 2 cups of powdered sugar was alot, but after I finished the rest of the steps and it was still runny, it definitely showed why so much powdered sugar is necessary for the texture. The taste is sweet, but light and very soft, however, tis known to cause tummy ache's very quickly! Overall, I really enjoyed this recipe and had alot fun with it. Thank you!

I made this icing recipe for pumpkin oatmeal cookie sandwiches. My husband is lactose intolerant so I used vanilla almond milk and avocado plant based butter for the icing. They were so delicious! My husband said that's the best oatmeal sandwich cookie he's ever had!

The filling for cookies is absolutely delicious and so easy to apply to cookies. I added 4 Tbs of Naked PB powder to the recipe and it's awesome as a peanut butter filling for cookies.
