These Sour Patch Kids cookies are the perfect mix of soft and sweet! The sourness tones down a lot after baking and the cookies have a nice fruity taste. I know they sound strange, but everyone that tries them has been pleasantly surprised!
1cupSour Patch Kids (cut ¾ cup of the gummies in half to add into the dough and reserve 1/4 cup to press into the top after baking)
Instructions
Use a knife to cut the Sour Patch Kids (1 cup) in half. Set aside.
Beat 1 cup butter, softened, ¼ cup granulated sugar, and ¾ cup light brown sugar together for about 30 seconds until combined.
Add 1 teaspoon vanilla extract, 1 package instant vanilla pudding, 1 teaspoon baking soda, and 3 large eggs. Mix together, then slowly add 1 tablespoon corn starch and 2 ½ cup all-purpose flour. Once flour disappears, add in ¾ cup of the cut-up Sour Patch Kids and mix until combined.
Use a 2-tablespoon sized cookie scoop to scoop dough onto parchment lined baking sheet. Use your hands to roll each scoop into a ball.
Bake at 350℉ for 9-11 minutes.
For presentation purposes, press the remaining¼ cup of Sour Patch Kids into the top of the baked cookies immediately after removing from the oven.
