In a large microwave-safe bowl, melt ½ cup unsalted butter, i.e 1 stick). Stir in ¼ cup granulated sugar and ¾ cup light brown sugar and mix with a whisk for 1 minute, or until mixture is cooled down.
Add 2 large eggs and 2 teaspoons pure vanilla extract and whisk for 2 minutes until smooth & creamy.
Add 1 teaspoon baking soda and ½ teaspoon kosher salt and stir in.
Add 1 package instant vanilla puddingandstir.
Add 1 ½ cups all-purpose flour and mix until incorporated.
Stir in ¾ cups mini chocolate chips.
Allow the dough to sit for 10 minutes to firm back up. This will make it possible to scoop them.
Scoop into 1 tablespoon scoops, split each in half, and roll into a ball.
Place on a parchment lined baking tray, then press extra mini chocolate chips into the top of each one.
