Sour Patch Kids Cookies

These Sour Patch Kids cookies are the perfect mix of soft and sweet! The sourness tones down a lot after baking and the cookies have a nice fruity taste. I know they sound strange, but everyone that tries them has been pleasantly surprised!

Ingredients

  • 1 cup butter, softened i.e. 2 sticks
  • ¼ cup granulated sugar
  • ¾ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 package instant vanilla pudding 4 serving size
  • 3 large eggs
  • 1 tablespoon corn starch
  • 2 ½ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup Sour Patch Kids (cut ¾ cup of the gummies in half to add into the dough and reserve ¼ cup to press into the top after baking)

Instructions

  • Use a knife to cut the Sour Patch Kids (1 cup) in half. Set aside.
  • Beat softened butter (1 cup, i.e. 2 sticks), granulated sugar (¼ cup), and light brown sugar (¾ cup) together for about 30 seconds until combined.
  • Add vanilla extract (1 teaspoon), instant vanilla pudding (1 - 4 serving size package), baking soda (1 teaspoon), and eggs (3 large). Mix together, then slowly add cornstarch (1 tablespoon) and all-purpose flour (2 ½ cups). Once flour disappears, add in ¾ cup of the cut-up Sour Patch Kids and mix until combined.
  • Use a 2-tablespoon sized cookie scoop to scoop dough onto parchment lined baking sheet. Use your hands to roll each scoop into a ball.
  • Bake at 350℉ for 9-11 minutes.
  • For presentation purposes, press the remaining ¼ cup of Sour Patch Kids into the top of the baked cookies immediately after removing from the oven.
