Homemade Chocolate Pudding

Ingredients

  • ¾ cup granulated sugar
  • cup unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • 2 ⅓ cup milk
  • 1 teaspoon vanilla extract
  • cup semi-sweet chocolate chips

Instructions

  • In a large microwave-safe bowl, whisk together granulated sugar (¾ cup), unsweetened cocoa powder (⅔ cup), and cornstarch (3 tablespoons). Add in milk (2 ⅓ cups), one cup at a time, and whisk until smooth and all lumps dissolve.
  • Microwave on high for 3 minutes. Once 3 minutes are up, leave bowl in microwave and carefully stir the mixture. Cook at 1 minute intervals, stirring after each minute, for 2 to 3 minutes, or until pudding is shiny and thick.
  • Remove from the microwave and stir in vanilla extract (1 teaspoon) and semi-sweet chocolate chips (⅓ cup) until smooth.
  • Cover pudding with plastic wrap and chill in refrigerator for 4-6 hours until chilled. When placing the plastic wrap, press it directly against the pudding to prevent a film from forming (not just on top of the bowl).
