Mini Peanut Butter Balls

These no bake peanut butter bites only require four ingredients (no butter here!) and can be whipped up in a food processor! If you're a fan of frozen Reeses peanut butter cups without all the guilt, these are for you.

Ingredients

  • ½ cup salted peanuts
  • 1 teaspoon honey
  • 1 teaspoon powdered sugar
  • ½ cup chocolate melting wafers

Instructions

  • In a food processor, blend peanuts for 20-30 seconds until pulverized.
  • Add in honey and powdered sugar. Continue to blend for 10-20 seconds until incorporated.
  • Separate mixture into 8 even sections and roll into balls (or press into candy mold). Freeze for 1-2 hours until hard.
  • To prepare for dipping, place a sheet of parchment paper on counter.
  • Melt chocolate according to instructions on package and use a fork to dip each peanut butter bite into the chocolate. I like to place each bite on top of a fork and then tap off the excess chocolate before placing the bite the parchment paper.
  • Allow chocolate to harden. Wrap individually or place in airtight container in freezer to store. I personally like these best when frozen, but they can also be enjoyed unfrozen for a softer treat.

Notes

This recipe creates a small batch of 8 bites, but you can easily double or triple the recipe for a larger crowd!
