So I have a confession. You know those cookie cakes you can buy at grocery stores/Walmart that are usually decorated in some kind of generic birthday decorations? Well…occasionally I buy them for no apparent reason other than the fact that they are de-lish. I don’t really care if they say “Happy Birthday” written on top…I can pretend it’s my birthday (right??!). But the bottom line is that even though they are heavenly, they are expensive. $10-15 dollars for a big cookie?! A little ridiculous in my opinion.
So a few years back I found the BEST cookie cake recipe. I had tried just using my regular chocolate chip cookie recipe and making it into a cookie cake, but it never turned out right. It either puffed up too much, or got too crispy.
I’m heading to a grill-out later on and was trying to figure out what recipe to make to bring along. So I looked in my cookbooks trying to find the golden ticket recipe. It was nowhere. And then I remembered it was written in one of my cookbooks back home. So I called home so my mom or sister could read it to me on the phone. But the only one home was my 15 year old brother. Let’s just say that scouring cookbooks and reading me a recipe over the phone wasn’t exactly what he wanted to do. God forbid I stop a intense game of video games.
But after a little of convincing, I got him to go to the kitchen and look for the recipe. The convo went a little like this…
Me: “Now go into the kitchen and find the red cookbook.”
Bro: “Where are the cookbooks”?
Me: “ARE. YOU. KIDDING. ME. BRO? You seriously don’t know where we keep the ba-jillion cookbooks?”
Me: “Above the fridge”
Bro: “Where’s that?” (This is him trying to be difficult with me)
Me: “Just find the recipe and read it to me”
Bro: “I seriously have to read the whole thing to you?”
Bro: “I’ll just picture message it to you”
My Favorite Chocolate Chip Cookie Cake
An easy, BIG homemade chocolate chip cookie cake great for birthdays, graduations, and more.
- 2 sticks of butter
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 cups + 2 tbls. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1 /2 tsp. vanilla
- 1 1/2 c. chocolate chips I like to use the mini ones
Cream butter and sugars together. Add eggs, baking soda, salt, and vanilla. Mix. Add flour and mix until incorporated. Stir in chocolate chips. Bake at 350 for 16-18 minutes. I like mine to be more chewy and less crunchy so I just watch them closely to make sure they don't get too brown.
(I usually use a pretty large round pan to bake these in so they aren't too thick. But a friend was borrowing mine at the time so I used a large rectangular one).
