So while we are already on the topic of caramel from the Iron Baker challenge, I figured I would share with you all one of my families favorite caramel puff corn recipe. Just when you though puff corn couldn’t get any more addicting, this recipe will show you how that’s possible. Puff corn is great because it doesn’t have those nasty kernels that get stuck in your teeth. Ohhhh yeah, floss-free recipe right here people!

Caramel Puff Corn

This is a great way to turn a boring ol' bag of puffcorn into a special, caramel treat!

Ingredients

  • 1 bag puff corn (8 ounce bag)
  • 1 cup butter try not to use margarine
  • 1 cup brown sugar
  • 1/2 cup light corn syrup Karo works great
  • 1 teaspoon baking soda

Instructions

  1. Pour puffcorn in a large roaster pan or jellyroll pan. In a 2 quart saucepan bring the butter, corn syrup, and sugar to a boil. Cook for 2 minutes. Add the baking soda. This will make the caramel mixture foam up. Stir well and remove from heat. Pour over the puff corn and bake at 250 degrees for 45 minutes. You want to stir it every 10-15 minutes to help cover all the corn with the caramel. Remove from heat and spread onto wax paper to cool.
